Recipe:
Here's a great salad recipe we've been enjoying for years. Cherry tomatoes, crunchy red onion, creamy white beans and avocado are dressed with a zippy lemon vinaigrette (we also like to put this bean salad on top of spinach or arugula). It's super easy and filling - perfect for summer when no one wants to be stuck in the kitchen! Make a big batch and eat it throughout the week.
