Here's a great salad recipe we've been enjoying for years. Cherry tomatoes, crunchy red onion, creamy white beans and avocado are dressed with a zippy lemon vinaigrette (we also like to put this bean salad on top of spinach or arugula). It's super easy and filling - perfect for summer when no one wants to be stuck in the kitchen! Make a big batch and eat it throughout the week.

We found the July 1st episode The Problem with the Solution, about trying to "solve" mental health issues, both fascinating and moving. Check it out.
